Low Carb Taco Casserole

2 lbs ground beef
2 tsp minced garlic
3 tablespoons chili powder
1 cup chopped red onion
2 chopped zucchini
3/4 cup salsa
1/4 cup water
2 (16 ounce) cans refried beans
1 cup sour cream
1/4 cup chopped green onion
1 1/2 cups shredded cheddar cheese

Preheat oven to 350 degrees. In a large skillet over medium-high heat, cook onion until translucent. Add beef and cook until it’s no longer pink. Season beef with garlic and chili powder. Spread meat evenly in a 9×13 baking dish, add salsa and water. Spread chopped zucchini over the meat. Dollop the re-fried beans over top. Spread the sour cream over the beans. Top with shredded cheese.

Bake in preheated oven for 30 minutes, or until hot and bubbly. Then sprinkle with green onions and bring to our potluck!
