Roasted Beets

4 pounds of beets, peeled and cubed
3 tbls olive oil
salt and pepper
2 tsp cumin
lemon juice

Preheat oven to 400°. Toss beets with oil, salt, pepper and cumin. Roast for 40 minutes, stirring once, until tender. Toss with lemon juice to coat. Put in half cup portions in baggies.
