2 bunches of kale
1 large sweet onion
5 cloves garlic, minced
2 large sweet potatoes, 1/2″ cubes
4 ounces of bacon, chopped small
1 can of red beans, drained and rinsed
Remove ribs from kale and chop. Cook bacon until done but not crisp. Add onion and garlic with a splash of olive oil. cook until onions begin to become translucent. Add sweet potatoes and saute until tender. Add greens and a splash of water and cook until tender but still vibrant. Add beans and combine.
